Breakfast Porcini

Serves 4 people

INGREDIENTS:

400g Bole frozen cubed porcini mushroom (do not thaw)
100ml Single cream
100g Butter
50ml dry Port
Salt & freshly ground pepper to taste

METHOD:

  • In a pot melt the butter and add the frozen porcini mushrooms continuously stirring. Cook for 3min. Add the port and allow to evaporate.
  • Reduce the heat and add cream, salt and pepper, allow to simmer further for 1min.
  • Serve on toast.
